Chocolate Avocado Pudding

This pudding is nothing short of delightful–it’s definitely a treat, and since it’s the weekend, we’re on board! This pudding is vegan, gluten free and, although it’s sweet, there is no refined sugar here. Super luscious and decadent, just a few bites can satisfy any sweet tooth!

Chocolate Avocado Pudding (makes ~6 servings)

  • 8 medjool dates (pitted, and roughly chopped)
  • 1 ripe avocado
  • 1/2 cup cocoa powder
  • 1/2 cup almond milk
  • 1/4 cup cashews
  • 2 tbsp melted coconut oil
  • 2 tbsp maple syrup
  • dash of salt (optional)
  • Optional toppings (chopped nuts, shredded coconut, chocolate chips)

Place all ingredients in a food processor and blend thoroughly. Chill in the fridge for ~30 minutes before serving.
