Taco night is better with queso. This stuff is yummy to dip chips in and to drizzle over tacos/burritos/pretty much anything else you’re daring to try.

If you’re looking for a vegan queso alternative, look no further. Cashews give this queso a perfect rich taste and creamy consistency while turmeric and nutritional yeast help to give it a cheesy color. No preservatives or yellow #5 here. Check it out!

Cashew Queso (makes 1.5 cups)

  • 3/4 cup cashews (raw)
  • 3/4 cup water
  • 1/4 cup olive oil
  • 1/4 tsp turmeric powder
  • 1 tbsp nutritional yeast
  • juice of half a lemon
  • 1 small garlic clove
  • 3/4 tsp salt
  • dash cayenne

Add ingredients to blender and mix on high until smooth. Put on tacos. 🌮
