Spice Up Taco Tuesday with this Walnut Lentil Filling

Here is a simple and hearty filling for your next Taco night. It als works great for burritos, Mexican-inspired salads and nachos!

Walnut Lentil Taco/Burrito Filling

  • 1 cup lentils
  • 2 cups water/veggie broth
  • Dash of salt
  • 2 tablespoons olive oil
  • 1 medium yellow onion
  • Dash of salt
  • 2/3 cup walnuts
  • 2 teaspoons olive oil
  • 1 teaspoon smoked paprika
  • 2 teaspoons chili powder
  • 1 teaspoon salt

To cook lentils, add 1 cup lentils and 2 cups water/veggie broth to a sauce pan with a dash of salt. Bring to a boil then cover and simmer for 30 minutes or until lentils are soft.

Next, dice onion and sauté lightly. Add walnuts and sauteed onion to food processor and pulse until walnuts chopped roughly (you want there to be some texture still). Next, add lentils, 2 teaspoons olive oil, smoked paprika, chili powder and salt to food processor and pulse 3-4 more times to combine.
