Peanut Butter Chocolate Chia Overnight Pudding

Dessert or breakfast? How about both? This is a simple light meal/snack featuring chia seeds, one of my favorite things to add to my breakfast. As you’ve probably heard, chia seeds are high in fiber and are a vegan source of Omega-3s. They also have magnesium, calcium and phosphorus – no wonder they are considered a super food!

Peanut Butter Chocolate Chia Overnight Pudding (serves 4)

  • 2/3 cups unsweetened coconut milk
  • 2/3 cups water
  • 1 tbsp maple syrup
  • 3/4 tsp vanilla extract
  • Dash of salt
  • 1/4 cup chia seeds
  • 1/4 cup peanut butter
  • 1 tbsp cocoa powder
  • 1 tbsp maple syrup

Whisk together coconut milk, water, maple syrup, vanilla extract and salt thoroughly. Next, stir in chia seeds and pour into desired containers. Cover and allow to sit in the fridge overnight.

The next morning, use a hand mixer to whip up the peanut butter, cocoa powder and maple syrup. Top over chia seed pudding and, if desired, garnish with shaved dark chocolate or shaved coconut.
