This is for all my friends who just can’t even.
Adulting as Best as I Can Mac and Cheese (serves 4-6)
- Bag of brown rice pasta
- Can of chickpeas, drained
- 1/3 cup nutritional yeast
- Juice of 1 1/2 lemons
- 1/4 cup olive oil + more for drizzling
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp cayenne
- black pepper + red pepper to taste
Boil pasta according to directions and drain. Stir in chickpeas, nutritional yeast, lemon juice, olive oil, onion powder, salt, cayenne and red/black pepper to taste. Optional: serve with a drizzle of olive oil.
