Adulting as Best as I Can Mac and Cheese

Life is hard. This recipe is easy. 

This is for all my friends who just can’t even.

Adulting as Best as I Can Mac and Cheese (serves 4-6)

  • Bag of brown rice pasta
  • Can of chickpeas, drained
  • 1/3 cup nutritional yeast
  • Juice of 1 1/2 lemons
  • 1/4 cup olive oil + more for drizzling
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp cayenne
  • black pepper + red pepper to taste

Boil pasta according to directions and drain. Stir in chickpeas, nutritional yeast, lemon juice, olive oil, onion powder, salt, cayenne and red/black pepper to taste. Optional: serve with a drizzle of olive oil.
